Making a homemade pie crust is not hard if you know a few secrets. Purchasing one at the local grocery store is fast and easy but you are missing the flavor and texture a well baked pie crust will have. Unlike cooking where you can play around with the amounts or temperatures used, baking requires much more exact balances for the proper reactions to take place. For example freezing the crust before baking can prevent cracking. Cracking of the crust would allow the filling to touch the glass or metal pan which is much hotter than the crust and leave a burn flavor to your pie. All because of that harmless crack in the crust you thought no one would see.
